Not another barley whisky
This release is built on 100% malted spelt. An old grain with a softer, broader voice than barley. And you can see that from the first pour.
In the glass it shows a deep marigold and amber tone. The texture is visible. Heavy oils cling to the sides, promising weight and structure.
On the nose it opens gently but with detail. Sweet cereals lead, followed by dried papaya and a clean mineral edge. There is a lift of green jasmine tea that keeps it precise and calm.
On the palate it moves with control. Soft, elegant tannins frame a rock candy sweetness. Oxidized papaya returns, now deeper, joined by exotic fruit and a quiet umami character. A delicate salinity runs underneath and keeps everything in balance.
The finish shifts again. Toasted sourdough bread and warm nuts appear first. Then raw cacao. Light but dry oak tannins carry the flavours forward in a long, composed fade.
What you get here is not volume. It is detail. Not sharp edges, but quiet layers that unfold over time.
This is a whisky that rewards attention. It holds complexity without noise. And it leaves a lasting impression long after the glass is empty.

The Palate

A burst of toasted sourdough bread and nuts, raw cacao, and light yet dry oak tannins in a long, lingering harmony.
