Visit Copenhagen Distillery for a two-hour dive into our award-winning and distinctively Danish whiskies. You begin in the cocktail bar with a welcome drink prepared by our friendly bartenders. From there, we walk through the factory together and explore how we make our spirit from grain to cask. We finish with a tasting of the full whisky portfolio. When the session ends, you’re welcome to stay in the bar and enjoy more drinks at your own pace.

Immerse yourself in the art, craft, and science behind our whisky. Everything starts with one simple idea: Danish whisky should taste like Denmark. We work with 100 percent organic Danish barley grown by local farmers who care about their soil as much as we care about flavour. The grain carries our terroir. Cool summers, long daylight hours, and clean farming give it the slow growth and strong starches that define our spirit. From there, we treat every step as a craft. We malt with care, mill the grain gently, and keep the whole kernel in the mash to capture every bit of natural character. Our fermentation uses both distiller’s yeast and the lactic bacteria living on the grain. That mix creates the layers that later show up in the glass. And when the wash is ready, we run it through our Müller hybrid still in a single, precise distillation. This choice keeps the spirit honest. Nothing is stripped away. The wash becomes New Make with clarity, depth, and a clean Danish edge.

The way we mature our whisky is just as deliberate. We use virgin Hungarian oak because its tight grain brings structure without overwhelming the spirit. Our casks are toasted to different levels depending on the expression. Light toast keeps the spirit bright and spicy. Medium toast adds warmth, caramel, and gentle sweetness. Heavy toast brings darker notes like chocolate and ripe fruit. We mature in small batches and control temperature shifts to speed up interaction between spirit and wood while keeping the flavour stable.

Over time, this builds a whisky that feels balanced, expressive, and rooted in place. No shortcuts. No unnecessary varnish. Just spirit, wood, and patience working together. The result is a distillery style defined by clarity, warmth, and quiet depth.


Our portfolio reflects this philosophy. Liquid Barley, our New Make, shows the spirit in its purest form. RAW builds on that purity and offers a bold, clean expression shaped only by virgin Hungarian oak. REFINED takes a step further and brings in cold-smoked malt and seasoned casks that echo Danish culinary traditions. And RARE is where we explore, test, and stretch the boundaries of what Danish whisky can be. Each edition is made from organic Danish barley, shaped with the same care, and bottled only when the balance is right. Together, they show the full range of our craft and the character of our terroir.
