Gin and Aquavit in Northern European Distilling
Gin and aquavit are two of the most important clear spirits in Northern Europe.
Historically they began in the same way. Early distillers produced rough alcohol and improved it by infusing plants with strong aromas.
In the Netherlands this became juniper based spirits that evolved into gin.
In Scandinavia it became caraway and dill based spirits that evolved into aquavit.
The idea is still the same today. Neutral alcohol becomes a canvas. Botanicals create the flavour.
The Foundation of Our White Spirits
For our white spirits we start with organic neutral alcohol distilled from wheat.
It is extremely pure and almost flavourless. That matters. When the base spirit is clean, every botanical becomes easier to control.
Then comes the creative part.
Each spirit begins with a botanical concept. Juniper must dominate gin. Caraway or dill must dominate aquavit.
Everything around those core ingredients is a design decision. Citrus peels, herbs, roots, spices and flowers all behave differently during extraction and distillation.
How We Extract Flavour from Botanicals
We extract flavour in two main ways.
Maceration
Botanicals rest in alcohol and water for up to 24 hours. During that time the liquid dissolves aromatic compounds from the plants.
Ethanol is a powerful solvent. It dissolves both water soluble compounds and essential oils. That is why alcohol carries flavour so well.
Distillation
The second method is distillation.
We heat the infused spirit in our still. Alcohol vapour rises and carries aroma compounds with it. As the vapour condenses again, those flavours become concentrated in the new spirit.
Distillation is not only technical. It is also creative. The distiller decides which part of the run to keep and where the spirit expresses the best balance.

Our still allows us to control this process carefully.
By adjusting reflux and temperature we can separate compounds with high precision. The goal is simple. Keep the flavours we enjoy and leave the harsh ones behind.
The result is a spirit that is intense but clean. Aromatic but balanced. Easy to drink but still complex.
