The Gimlet dates to the 19th century. At the time, British sailors often mixed lime juice with smaller quantities of neutral spirits to preserve it for long voyages. Until a a ship provisioner named Lachlan Rose created a technique to fortify the juice with sugar rather than alcohol. Over a century later, the Gimlet remains an icon of sours. It’s given rise to variations, try ours with lemons from the production of Dill Anise Aquavit. We transform the lemon juice to a cordial that tastes like jam and happy summer days, give it a hard shake and an abundance of Dill Anise Aquavit. Rinse and repeat!
